To make this as easy as possible, look for weak, unshielded bandits who lack high defensive capabilities. The weaker they are, the faster you kill them and the more likely you are not to take any damage.
Don't forget to dodge (O on PS5) when they try to attack you.
In most cases, this will occur naturally through regular gameplay while using a sword, especially if you have upgraded your weapon and utilize heavy attacks to dispatch foes with greater speed.
